Ingredients:
1 1/2 | Cups | Flour | ||
2 | Tbsp | Sugar | ||
1 | Tsp | Baking Powder | ||
1 | Tsp | Baking soda | ||
1/2 | Tsp | Salt | ||
1 | each | Egg | ||
1 | Cup | Milk | ||
3 | Tbsp | Lemon Olive Oil | *Olive Morada | |
2 | Tbsp | Lemon Juice, fresh | ||
1/3 | Cup | Ricotta |
Directions:
- Combine flour sugar, baking powder, baking soda and salt in a large bowl.
- Whisk together egg, milk, lemon olive oil, lemon juice and ricotta in a medium bowl.
- Add wet ingredients to dry ingredients and stir until just combined.
- Pour ¼ at a time to hot griddle, flip when bubbles form and cook until golden.
- Serve with lemon curd, fresh berries and syrup.
