Lemon Ricotta Pancakes

Ingredients:

1 1/2CupsFlour
2TbspSugar
1TspBaking Powder
1TspBaking soda
1/2TspSalt
1eachEgg
1CupMilk
3TbspLemon Olive Oil*Olive Morada
2TbspLemon Juice, fresh
1/3CupRicotta

Directions:

  1. Combine flour sugar, baking powder, baking soda and salt in a large bowl.
  2. Whisk together egg, milk, lemon olive oil, lemon juice and ricotta in a medium bowl.
  3. Add wet ingredients to dry ingredients and stir until just combined.
  4. Pour ¼ at a time to hot griddle, flip when bubbles form and cook until golden.
  5. Serve with lemon curd, fresh berries and syrup.
